Quick Vegan Mexican Pizza:

Ingredients:

1 small whole wheat tortilla
1/4 cup refried beans
1/4 cup salsa
1/4 cup corn kernels
1/4 cup black beans, drained and rinsed
1/4 cup diced bell peppers
1/4 cup diced onions
1/4 cup vegan cheese shreds
Fresh cilantro, for garnish
Instructions:

Preheat your oven to 400°F (200°C).
Place the tortilla on a baking sheet. Spread refried beans evenly over the tortilla.
Spread salsa over the beans, then sprinkle corn, black beans, bell peppers, onions, and vegan cheese on top.
Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly. Garnish with fresh cilantro.
