Vegan Tofu Menemen

Ingredients:

1 block firm tofu, crumbled
1 onion, chopped
1 red bell pepper, chopped
2 tomatoes, chopped
2 tbsp tomato paste
2 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
Fresh parsley for garnish
Instructions:

Sauté onion and bell pepper in olive oil until softened.
Add crumbled tofu and cook for 5 minutes.
