Quick Vegan Chickpea Salad

Ingredients:

1 can of chickpeas, drained and rinsed
1/2 red onion, finely chopped
1/2 red bell pepper, diced
1/2 cucumber, diced
1/4 cup fresh parsley, chopped
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Instructions:

In a large bowl, combine the chickpeas, red onion, red bell pepper, cucumber, and parsley.
Drizzle with olive oil and lemon juice.
Season with salt and pepper, and toss to combine.
Serve as a light and refreshing salad, or enjoy it on its own!
