Quick Vegan Lentil Dal

Ingredients:

1 cup red lentils
3 cups water
1 onion, chopped
2 cloves garlic, minced
1 tbsp ginger, grated
1 tsp each turmeric, cumin, coriander
1 tsp garam masala
Salt, pepper to taste
Fresh cilantro for garnish
Instructions:

Boil lentils in water until soft, about 15-20 mins.
Sauté onion, garlic, ginger until soft.
Add spices, cook for 1 min.
Add cooked lentils, stir.
Season with salt, pepper.
Serve hot, garnish with cilantro.
