Quick Vegan Potato Salad


3 large potatoes, boiled and diced
1/2 cup vegan mayonnaise
1 tablespoon Dijon mustard
1/4 cup chopped red onion
1/4 cup chopped celery
1/4 cup chopped pickles
Salt and pepper, to taste
Fresh dill, for garnish

In a large bowl, combine diced potatoes, vegan mayonnaise, Dijon mustard, red onion, celery, and pickles.
Season with salt and pepper, and mix well to combine.
Garnish with fresh dill.
Serve chilled and enjoy your quick and tasty vegan potato salad!
